Detroit Burger Bar's bacon and jalapeno beer cheese recipe

The guys from Powers Distributing joined us on The Nine to give us some tips for pairing brews with your summer BBQ menu. Detroit Burger Bar joined, too, to share with us their Griffin Claw Mr. Blue Sky Bacon and Jalapeño beer cheese recipe, which you can find below. 
 
INGREDIENTS: 
 
2 ounces flour  
2 ounces butter 
6 ounces chicken stock 
1 ounce heavy whipping cream 
6 ounces Griffin Claw Mr. Blue Sky 
1 cup cheddar cheese 
4 ounces bacon bits 
2 ounces chopped jalapeños
 
INSTRUCTIONS: 
 
1. Melt butter in sauce pan 
2. Whisk in flour and simmer for 2 minutes
3. In a separate pan - heat chicken stock and Griffin Claw Mr. Blue Sky together and bring to a boil
4. Add in the roux (butter/flour mix) to the chicken stock / beer
5. Add heavy whipping cream and stir in cheddar cheese
6. Sauté bacon bits with jalapeños then mix in the Cheese sauce
 
The Griffin Claw Mr. Blue Sky Bacon and Jalapeño beer cheese is an excellent topping on a burger. We suggest cooking a burger patty to recommended temperature, adding Cajun seasoning to burger meat, then topping it off with the beer cheese and other toppings, like lettuce, tomatoes, onions, etc. as desired.
