VIDEO: Chef Ron Rebecca joined us in studio to show us some German food. You can get his recipe for German potato salad below.
German potato salad
2 pounds Idaho potatoes
8 slices bacon, cut into strips
1 onion, diced
1 cup chicken stock
¼ cup cider vinegar
1T fresh chives, chopped fine
Salt and pepper to taste
PROCEDURE: Place the potatoes in a pot covered with water. Bring water to a boil then allow to simmer for about 20 minutes until potatoes are fork tender. Drain potatoes and allow to cool. When cool peel and slice potatoes about ¼ inch thick.
In a large sauce pan cook bacon until crispy. Remove half of the oil and add onions. Cook onions until clear and tender. Reduce heat and add flour. Allow to cook slowly for 5 min. Add stock, cider vinegar and sugar and allow to cook on low for 20 min. Combine with sliced potatoes and cook until potatoes are warm. Season to taste with salt and peper. Finish with fresh chives and enjoy. Adjust consistency with chicken stock as needed.
