(WJBK) - Earlier this year Westin Hotels & Resorts created a program to engage its culinary teams worldwide to develop nutritious and delicious offerings to its littlest guests. After judging 180 entries submitted by 74 properties, a menu of 35 winning breakfast, lunch and dinner recipes was selected.
The Book Cadillac is proud that two of its entries are winners: Turkey Waffle Sandwich served with cauliflower tots and turkey sausage patties; and the Pizza Pocket prepared with phyllo dough.
Chef Jon Konicki joined us in the FOX 2 Cooking School to show us how to prepare the turkey waffle sandwich with cauliflower tots. This story will be updated soon with the recipe.

TUKEY AND ORGANIC EGG WAFFLE BREAKFAST SANDWICH; SERVED WITH CAULIFLOWER TOTS

1 Scrambled Egg, In 1 TBSP Olive Oil
Chickpea Waffle (See below for recipe)
Turkey Sausage Patty (See below for recipe)
4 Cauliflower Tots (See below for recipe)
½ EA Onion Diced
2 EA Garlic Clove
1 TBS Sage Minced
8 oz Lean Ground Turkey
1 EA Granny Smith Apple Shredded
Salt and Pepper to taste
2 Cups Steamed Cauliflower
1 EA Egg
1 TBS Panko
1 TSP Minced Parsley
¼ Cup Low Fat Cheddar Cheese
½ TSP Garlic Powder
1/2 TSP Onion Powder
CORNMEAL CHICKPEA WAFFLE
2/3 Cup Chickpea Flour
1/3 Cup Cornmeal
1 Cup Almond Milk
1 TBSP Maple Syrup
1 TBSP Apple Cider Vinegar
1 TSP Salt
1/2 TSP Baking Powder
METHOD OF PREPARATION
Turkey Sausage Patties
1 Sauté onion, garlic and sage over low heat. Cool
2 Combine cold onion mixture with ground turkey and shredded apple
3 Season with S&P
4 Form into 8 1oz patties, cook in a heated sauté pan until internal temperature of 165 deg. Is reached.
5 Set aside
1 Place cooled steamed cauliflower in food processor and process until it resembles rice
2 Place cauliflower in a mixing bowl and add the remaining ingredients
3 Season to taste
4 Spray silpat mold with nonstick spray and fill cavities with 1 tablespoon of mixture
5 Bake in 350 deg. For 12 minutes or until golden brown.
Cornmeal Chickpea Waffle
1 Combine all dry ingredients, add wet ingredients, whisk. Let rest for a few minutes
2 Use as directed in heated waffle iron
Cut waffle in half, place 1 turkey sausage patty, 1 scrambled egg, 1 slice of low fat cheddar cheese on the bottom half- Top with the other waffle half. Serve with 4 cauliflower tots
