Soup Specialist Lateshia Dowell presents Cucumber Gazpacho soup

Zoup! Cucumber Gazpacho


Ingredients:
1/2 cup diced scallions 
1 large cucumber, de-seeded and diced
3-4 stalks of celery, diced
1 green pepper, de-seed and diced
2 fresh jalapenos de-seed and diced
1 tbsp. fresh dill
1 tbsp. fresh cilantro
1/2 tbsp. Extra Virgin Olive Oil
1/2 cup Red Wine Vinegar
Zest and juice 1 lemon
1 1/2 tbsp. green Tabasco
1 tsp. salt
1/2 tsp. black pepper
1/2 tbsp. sugar
1 jar Zoup! Good, Really Good Savory Vegetarian broth
Directions:
1.     Combine all ingredients
2.    Stir well
3.    Refrigerate
4.    Serve cold
Serves: 4 to 6
