Firebird Tavern's Tuscan Bean Soup

- Firebird Tavern is in the heart of Detroit's Greektown on Monroe Street. They have some new menu items, and joined us in the FOX 2 Cooking School to give us a sampling of their new Tuscan Bean Soup. You can find the recipe below, courtesy of the restaurant's co-owner Owen Burke.

TUSCAN BEAN SOUP
Serves 4

3 shallots
3 cans Cannellini beans
1 and 1/2 glass white wine
2 teaspoons tomato paste
2 cans veg stock
couple sprigs fresh chopped rosemary
pinch red pepper flake
olive oil
 
Finely dice shallot
Add shallot, red pepper flake and olive oil to large stock pot and soften
Once shallots are soft, add rest of ingredients and bring to boil
Reduce heat and simmer for 1.5 hours
Smash some beans with potato masher half way through cooking time
