SNAPPY HOLIDAY APPS ON THE FLY
Bruschetta's either served on crostini or with breads and crackers to dip as a fast, easy and scrumptious way to entertain your guests.
 
Pick 3-6 Different styles of bruschetta's served in fun bowls with different styles of crackers, crostini's, pita or pizza flats, potato and tortilla chips, cucumber coins and whatever else you can think of to smear bruschetta on. Or toast your crostini or whatever you want your base to be and assemble into pieced appetizers and set out on trays with garnish. Good rule of thumb is 4-5 pieces per person as an appetizer (if you are serving dinner, bump up your number to 8-10)
 
Crostini Bread
Slice baguette style bread ¼ inch rounds toss in olive oil or olive and butter . Toast in 375 degree oven for 6-8 minutes, until golden.
 
Puff Pastry Spinner Logs
Take 1 sheet of puff pastry, select one of the bruschetta concepts smear desired cheese, sprinkle bruschetta, roll up like a pinwheel and slice ¼ inch thick. Line cut side up on parchment lined sheet tray bake at 350 for 8-12 minutes until golden

Is a great carrier for many of the bruschetta's below as well as fancy chicken and shrimp salads.
 
BRUSCHETTA CONCEPTS
 - Artichoke dip
 - Crab dip
 - Tomato jam & goat cheese smear
 - Fruit chutney & brie cheese
 - Beet, orange & honey scented goat cheese with crushed pistachios
 - Fig & prosciutto; pesto ricotta smear
 - Greek; feta, roasted pepper, shrimp & chopped olives with feta/cream cheese smear
 - Roasted balsamic grapes and goat cheese
 - Cranberry &brie
 - Wild mushroom; oven roasted with balsamic and tossed with crumbled goat cheese
 - Ricotta with lemon and basil
 - Roasted pear and gorgonzola
 - Tomato & basil with garlic
 - Steak & onion with blue cheese smear
 
Crab Dip
 - 1 15 oz. can select cooked crab meat
 - 1 lb. cream cheese ( soften)
 -  1/2 cup mayo
 - 3 Tb lemon juice
 - 1 Tb. Onion powder
 - 1 tsp sea salt
 -  1/4tsp cayenne pepper
Mix all ingredients
 
Tomato Jam
 -  1~ 15 oz. can organic crushed tomatoes
 -  1~15 oz. can diced tomatoes
 -   2 cups sugar
 -  1/4 cup white balsamic vinegar
 -  1 Tb tsp sea salt
Put all ingredients in heavy bottom pan and reduce by half until thick about 25-35 minutes
 
Cranberry Bruschetta
Ingredients
 -  2 Tablespoons butter, melted
 -  2 Tablespoons olive oil
 -  1/2 a French or multi baguette, sliced thin
 -  12 ounces fresh cranberries
 -  2 Tablespoons balsamic vinegar
 -  1/2 cup sugar
 -  1 Tablespoon rosemary
 -  5 ounces triple cream brie
 -  Pinch of cinnamon
 
Directions
1. Preheat oven to 355 degrees.
2. In a small bowl, whisk together the butter and olive oil. Toss bread slices or brush oil/butter blend on, place on sheet tray and bake in oven
3. In another small bowl, stir together the cranberries, balsamic vinegar, sugar, and rosemary. Spread these out on a rimmed baking sheet.
4. Place the cranberries in the oven. Roast for five minutes, and then add the tray of baguette slices to the oven. Roast for an additional 6 minutes then remove the baguette slices, flip them over, and return to the oven for another 4-6 minutes, or until crispy and golden. At this point, the cranberries should be popped open with juices running out. Remove both the cranberries and baguette slices from the oven.
5. Top each baguette with a slice of brie and a spoonful of cranberries. Garnish with a sprinkle of thyme
These can be served while the cranberries are still warm, or you can make the components ahead of time.
 
Chef Kelli's Wild Mushroom Coins
 -  3 TB olive oil
 -   1/2 c diced button mushrooms
 -  Spanish onion minced
 -  1/2 c white wine
 -  1/2 c diced shiitake mushrooms
 -  1/2 c diced portabella mushrooms
 -  1/2 c diced oyster, morel or other exotics
 -  1/2 c goat cheese
 -  1/4 cup cream cheese
 -  1 egg
 -  1 TB chopped herbs
 -  3 puff pastry sheets
 
METHOD:
1. Sautee onion, add mushroom, deglaze with white wine. Season & cool mixture, then blend cheese & fold mushroom mixture into cheese adjust seasoning spread evenly between two puff pastry sheets and roll pinwheel style. Chill logs, cut into ½ inch slices, lay cut side up on cookie sheet, brush with egg wash and bake at 350 8-10 minutes until golden brown. Freeze logs if desired for a last minute appetizer on the fly!
 
Jeweled Goat Cheese Bowl
 -  1 # goat cheese crumbled into serving bowl
 -  4 Tb diced candied ginger
 -  1/8 cup diced dried apricots
 -  1/8 cup dried cherries or cranberries
 -  8 large blackberries cut in half
 -  3 oz. maple syrup
Sprinkle fruit over crumbled goat cheese, drizzle with maple syrup, and serve with crostini¡¦s and crackers
