Meatless Monday: Annabel's & Company dish up deliciousness

Who says you have to have meat to make something taste good?

This Meatless Monday, Brad Dockery showed us how to make two different delicious meals: a grilled pineapple and portobello sandwich and an avocado and grapefruit salad with champagne vinaigrette.

Grilled pineapple and portobello sandwich:
On a stovetop grill placed sliced pineapple, grilling both sides til charred.  Remove and set aside.
Brush olive oil on mushroom cap seasoning with salt and pepper.  Grilled 5 to 10 minutes on each side.
Toast or grill bun then smear with Boursin and assemble.  YUM!

Smoked whitefish, avocado and grapefruit salad, champagne vinaigrette

In a large bowl, toss one package butter lettuce and one bunch watercress.  Use one large red grapefruit, pith removed and sectioned over a bowl to catch juices.  Cut grapefruit and toss into lettuce.  Peel and pit one avocado diced or sliced then add to salad.  Skin and bone on smoked whitefish breaking it up then also adding to salad.  Add salt and pepper to taste. 
In a small bowl, whisk together ¼ cup extra virgin olive oil and 2 tablespoons champagne vinegar.  Toss well with salad and ¼ cup chopped toasted pecans and chopped chives.  Enjoy!!!
