Breakfast bars from Coco Fairfield's

This recipe for breakfast bar comes courtesy of Nicole Miller from Coco Fairfield's, and is the perfect treat to get kids off to a good back-to-school start.

Coco's Breakfast bars

1 lb. fresh strawberries, diced
2 cups rice flour
1 T potato starch
1 T tapioca starch
1 ½ t baking powder
½ t baking soda|
1 cup raw sugar
½ cup butter
1 t vanilla extract
¼ cup maple syrup (optional)

1. Pre-heat oven to 350 degrees
2. Mix all ingredients with hand mixer until well blended.
3. Fold in diced strawberries
4. Evenly spread the batter in 9x13 greased pan
5. Drizzle maple syrup on top (optional)
6. Bake for approximately 45 minutes or until toothpick comes out clean
7. Let cool completely before cutting into bars
8. Bars can be wrapped and kept for a week
