Brome Burgers and Shakes' mushroom swiss burgers

(sauce for Wild Mushroom burger)

1 tablespoon cloves garlic pasted
1 tablespoon shallot minced
1 tablespoon lemon juice
1 cup mayonnaise
1/4 cup whole grain mustard
1 tablespoon minced fresh herbs (tarragon, basil, oregeno)

Toss all ingredients together, refrigerate 1 hour before serving

1 cup red quinoa, rinsed well
2 cups vegetable stock
1 bay leaf
1 sprig of thyme
2 cloves garlic
1 tablespoon olive oil
1 small shallot ruff chopped
In a fine strainer, rinse quinoa under running water for 30 seconds to remove any bitterness from the outside. Place quinoa in a medium sauce pan along with all the other ingredients. Bring the mixture to a boil, then reduce to a simmer for 10-20 minutes. Once the stock is absorbed, remove from heat and cover for an additional 5 minutes. Remove thyme and bay leaf and fluff quinoa.
