Cafe Muse's Mushroom and Goat Cheese Bisque
1 tablespoon Olive Oil
2 lbs Cremini Mushrooms, washed and chopped
1 large Shallot, chopped
1 Yellow Onion, chopped
2 cloves Garlic, chopped
2 cups Half and Half
4 oz. Goat Cheese
Salt and Pepper to taste
1 teaspoon Truffle oil (optinal)
In a pot over medium, heat the oil and sauté shallots, onion, and garlic until soft. Add the mushrooms and continue to cook until the mushrooms are soft and their liquid has been released.
Remove from the heat. Using a hand held blender, puree until smooth. At this point, add the half and half and cheese. Continue to blend until the cheese is fully incorporated. Season with salt, pepper and truffle oil.
Reheat over low heat and stir until hot. Garnish with goat cheese crumbles.
