CAYA Smokehouse's tomato cucumber salad

Tomato Cucumber Salad
For the pesto:
½  lb. basil
½ cup toasted pine nuts
½  bunch parsley
2 pc peeled garlic
¼ cup grated parmesan cheese
1 cup extra virgin olive oil
Salt and pepper to taste
In a food processor add everything except the oil. Pulse until ground. Slowly add the oil while machine is on. Puree until a paste is made. Season with salt and pepper.
For the salad:
2 pints grape or cherry tomatoes cut in half
2 ea cucumbers diced
½ ea red onion small diced
¼ cup blue cheese crumbles
1 cup pesto
Sal and pepper to taste
Combine all ingredients in a bowl. Season with salt and pepper. This can be made 1 day ahead. Once mixed it should be eaten.
