CAYA Smokehouse's vegetable risotto

Vegetable Risotto
1 tbl butter
½ cup diced onion
2 cups Aborio Rice
4 qt chicken or vegetable broth
½ cup heavy cream
1 cup spinach
1 cup cooked mushrooms
½ cup diced tomatoes
½ cup parmesan cheese
Salt and pepper to taste
Sauté the onion in butter on low heat until translucent. Add the rice and toast in the pan. Add the stock 1 cup at a time continuously stirring. Season with salt and pepper half way through the cooking process. When the rice is almost cooked through, add the vegetables. Finish with cream and parmesan. Season again with salt and pepper.
This can be an entrée, side dish, or appetizer.
