Chef Kelli's reinvented botanas

The Spanish Translation for Botana means "little snack." They have grown in size at many restaurants over the years. Chef Kelli Lewton of 2 Unique Caterers and Event Planners and Purefood2U joined us in the FOX 2 Cooking School to show us some examples of how you can make your own botanas. Tequila Citrus Chicken
Black beans, pickled mango & a crisp chili banana served on chip of your choice
Marinate chicken with a splash of tequila, olive oil, lime zest and juice for a couple of hours before grilling, canned or cooked black beans seasoned with a pinch of cumin and sea salt, slice banana chip thin fry in shallow oil and sprinkle with  a little chili powder.   Layer ingredients on chip

Ancho BBQ Beef Brisket
Pickled red onion, cilantro, diced Jalapeno & avocado
Brisket or cut of beef of your choice, rubbed with cumin, sea salt, black pepper & chili powder, roast with a little beef or chicken stock and a smidge of tomato paste and a heavy splash of cider vinegar.  Layer ingredients on chip   

Chimichurri White Fish
Pickled Radish & coriander seed with charred onion & tomato
Grill or roast whitefish with chimichurri, char onions in hot pan with a little oil and then add tomatoes. Layer ingredients on chip
