Cutting Edge Cuisine's fall chicken with apple recipe

While everyone obsesses about the artificially-flavored pumpkin spice products available for the next few months, let's take a moment to celebrate a local, seasonal produce - the apple.

INGREDIENTS
4 boneless, skin on chicken breast
3 large apples- any variety
1 white onion
4 cups of fresh spinach or 1/2 box frozen chopped spinach
1 small package Boursin cheese
1/4 cup white whine
1/4 cup toasted breadcrumbs
4 tablespoons butter
Salt, pepper, vegetable oil

Method
Medium Dice the onion and apples. Sauté with butter until soft and Caramelized, deglaze with white wine and reduce. Add in spinach and remove from heat and wilt spinach. Transfer to a bowl and cool. Mix in breadcrumbs and Boursin cheese. Season as needed with salt and pepper.
Create a pocket hole in the chicken breast with a pairing or boning knife. Place Stuffing mix into a piping bag and stuff each chicken breast. Sear chicken breast in hot sauté pan with a little oil until brown. Finish cooking in the oven until the chicken is cooked Through, About 10 minutes.

Sauce
2 cups apple cider
2 cups chicken stock
2 tablespoons whole grain mustard

Place ingredients in sauce pot and cook to reduce to the liquid by half. Season as needed.
