Guernsey Ice Cream Cupcake Sundaes

Since 1940, Guernsey has gained a loyal following for their ice creams, milks and more. The company is celebrating 75 years this year -- and is hosting a five-day celebration at the Michigan State Fair Labor Day weekend. They'll announce the grand prize winner who's getting 75 years of free ice cream. Seventy-four other people will win free ice cream for a year. They'll also have a station where you can drink all the chocolate milk you want for just $1.

The granddaughter of Guernsey's founder, John McGuire, Colleen Ortman joined us on The Nine. She's also the current store manager. She shared with us the recipe for their ice cream cupcakes. You can find the recipe below.

GUERNSEY ICE CREAM CUPCAKES

Ingredients:
1 48oz. container Guernsey Farms Dairy Ice Cream, slightly softened
½ pint Guernsey Farms Dairy Heavy Whipping Cream
2 tablespoons powdered sugar
24 baked and cooled cupcakes, flavor of choice, unfrosted
Room in your freezer for a large baking sheet

Optional Ingredients:
Guernsey Hot Fudge, Butterscotch Caramel &/or Chocolate Syrup, Crumbled cookie bits, toffee pieces, chopped nuts, graham cracker, etc

S'mores--Vanilla cupcakes, Guernsey Farms Dairy Chocolate Marshmallow Ice Cream, graham crumbles, marshmallow topping or toasted marshmallow, Guernsey Chocolate Syrup

Pistachio Hot Fudge--Guernsey Farms Dairy Pistachio Ice Cream, chocolate cupcakes, Guernsey Hot Fudge

Grasshopper--chocolate cupcakes, Guernsey Farms Dairy Crème de Novi Ice cream, crushed Oreos, Guernsey Chocolate Syrup

Raspberry Fudge Torte--Cheesecake cupcakes, Guernsey Farms Dairy Raspberry Fudge Torte Ice Cream

Peanut Butter Lovers--Peanut butter or chocolate cupcakes, Guernsey Farms Dairy Mackinac Island Peanut Butter Fudge Ice Cream

Neapolitan--Chocolate cupcakes, Guernsey Farms Dairy Strawberry Ice Cream (whipped cream layer adds the vanilla)

Carrot Cake--Carrot cake cupcakes, Guernsey Farms Dairy Vanilla Ice Cream

Directions:
Once you've decided on your perfect combination of ingredients, gather them all--assembly goes quick! Cut cupcakes in half, then let the ice cream soften on the counter while you make the whipped cream.

To make whipped cream, beat the heavy whipping cream in a chilled bowl over medium speed, slowly adding the powdered sugar. Continue whipping until stiff peaks form, and chill in fridge.

Using an ice cream scoop or a spoon, place a scoop of ice cream on the bottom half of the cupcake, then place the 'lid' of the cupcake on top, pressing down gently. If using any optional ingredients such as Guernsey Hot Fudge, it can be added on top of the ice cream, or on top of the cupcake.

Add a spoonful of whipped cream to the top of cupcake, along with any remaining 'optional' ingredients.

Freeze on baking sheet immediately after each couple cupcakes are assembled to reduce melting.

Let cupcakes harden a few hours or overnight before serving.
