Huli Huli Chicken from Yardbird

Huli Huli Chicken

INGREDIENTS
1 whole chicken, backbone removed and spatchcocked (a technique that involves splitting the bird down the back to lie flat)
1 small pineapple, peeled cored and sliced for garnishing
1 small bunch scallions sliced thin
1 cup soy sauce
1 cup brown sugar
1 cup pineapple juice
1/4 cup rum
2 tablespoons minced fresh ginger

METHOD
Place the soy sauce, brown sugar, ginger, pineapple juice and rum in a saucepot and heat to dissolve the sugar.
Allow mixture to cool completely.
Place half of mixture over the chicken and marinate for 24-48 hours.
Drain off chicken and smoke at 250 degrees for 2 and 1/2 hours, using fruit woods.
Alternatively, the chicken may be oven roasted or grilled.
Use the remaining half of the marinade to baste the chicken in the final 1/2 hour of cooking.
Serve with the pineapple and garnish with the scallions.
