Kale and Quinoa salad by Diamonds Steak and Seafood

Diamonds Steak and Seafood in Howell is known for their filet mignon tips and they are only days away from serving their one millionth skewer.

Restaurant owner Adam Merkel and Chef Craig Myrand joined FOX 2 with more.

The restaurant will host a contest throughout the month of September for all guests who dine at the restaurant, where at the end of the month, THREE lucky winners will be randomly selected to receive free filet mignon tips every week for an entire year.

To participate, guests simply need to dine at Diamonds Steak & Seafood during the month of September and they will be entered to win. Guests can be entered to win up to 30 times if they dine daily throughout the month of September. The three winners will be chosen on October 1, 2018, and announced on Diamonds Steak and Seafood's Facebook page. 

Winners may enjoy his/her free filet mignon tips once per week for an entire year, beginning from the date of the announcement. The prize may be transferrable only once to a friend or family member throughout the duration of that year.

Diamonds Kale & Quinoa Salad

Serves 4 ppl   

 

10 ounces   cleaned and chopped green kale

8 ounces     Champagne vinaigrette

2 Tbl            pine nuts

1 cup           cooked quinoa

1/4 cup        golden raisins

1/4 cup        pickled onion

4 ounces     shaved Parmesan cheese

 

1.  mix kale with the vinaigrette, pine nuts, quinoa and raisins.

2.  transfer mixture into a serving bowl or 4 small plates.

3.  top with a little pickled onion and shaved Parmesan.
