Lamb lollipops from Daytona 500 Celebrity Chef Tim Love

- The 58th running of the Great American Race, the Daytona 500, will be live right here on FOX 2 on Sunday, February 21 starting at 12 p.m. If you've ever been to the Daytona 500 or any NASCAR race, you know food is everywhere you look. People even tailgate.

Celebrity Chef Tim Love stopped by the FOX 2 Kitchen to show us some recipes to help viewers throw the ultimate "Daytona Day" party. You can find his recipe for the lamb lollipops below.

Serves 6-8
Prep time: 15 minutes
Cook time: 10 minutes
Total time: 25 minutes

2 Racks of Lamb (Frenched)
6oz Wild game rub
Yuzu aioli (Recipe Follows)
2 eggs
1 Bottle blended oil
1 Bottle Yuzu Juice
Juice of 1/2 lemon
Salt to taste
1/2 teaspoon white vinegar
1 teaspoon dijon mustard

1. Take the two lamb racks and cut them into 1" bone chops and set aside
2. In a metal mixing bowl combine the white vinegar, mustard, lemon juice, and salt
3. Whisk all of this together, continue to whisk while incorporating one egg at a time until the mixture begins to thicken, this should double in size
4. Add salt to taste
5. Add your yuzu in at the end for desired flavor
6. Turn the skillet on to a medium high heat
7. Take the lamb chops and lay them out on your cutting board and season both sides well with the game rub
8. Add oil to the hot skillet and place chops in one at a time
9. Let them cook about 1 1/2 minute per side for a medium rare
10. Once finished on grill, take off heat and place on platter and top with the yuzu aioli
