LEMON CHICKEN W/MUSHROOMS AND ARTICHOKES
4 boneless, skinless chicken breats, cut in half (butterflied, cut through long side of breast, nearly end-to-end but not all the way through)
*marinade butterflied chicken breasts overnight in olive oil, garlic, salt, pepper, lemon juice and oregano
In a bowl, whisk together:
3 tablespoons of vegetable oil
1/3 cup of chicken broth
4 tablespoons of lemon juice
1 tablespoon of all purpose flour
Pour sauce over chicken and pan fry chicken, sauce mixture, cooking chicken 3-4 minutes on each side.
Garnish with fresh parsley if desired, and serve.
