Local chef to be on Food Network competition

Chef Tom Lin is the owner of Szechuan Empire restaurants, and he will be part of the competition on Guy's Grocery Games on Food Network April 17.

He joined us in the FOX 2 Cooking School to tell us more, and show us some of his grilling recipes, which you can find below.

GRILLED VEGETABLES
Bell peppers, seeded and halved
Yellow squash, sliced into ½ inch thick
Japanese eggplant, sliced into ½ inch thick
Asparagus
Mushrooms
Preheat the grill over medium heat for 10 minutes, brush the vegetables with vegetable cooking oil to coat lightly, sprinkle salt and pepper. Grill the vegetables until tender and lightly charred, about 6-7 minutes.

ASIAN BARBECUED CHICKEN
2 pounds of boneless and skinless chicken breast
1 TBS. of vegetable cooking oil
1 TBS. of brown sugar
1 tsp. of minced ginger and 1 tsp. of minced garlic
1 tsp of five spice powder
¼ cup of hoisin sauce
2 TBS. of ketchup
1-2 TBS. of honey
A pinch of salt and pepper
Preheat the grill over medium high heat for 10 minutes. Mix cooking oil, brown sugar, ginger, garlic, five spice, hoisin, ketchup, honey, salt and pepper in a bowl. Rub on the chicken. Grill the chicken for 4-5 minutes until grill marked and flip over and cook until a thermometer registers 165 degrees F.
