New spring menu at CAYA Smokehouse

CAYA Smokehouse in Wolverine Lake is lightening things on their menu with some new spring recipes. Jeff Rose joins us in the FOX 2 Cooking School to show us one of those recipes, which you can find below.

Crudo Salad
For the dressing:
2 lemons zested and juiced
¼ cup champagne vinegar
1 cup extra virgin olive oil
1 teaspoon sugar
Salt and pepper to taste
Wisk all ingredients together. Can be kept in the fridge for a week.
For the salad:
1 pc zucchini
1 pc yellow squash
1 pc carrot
1 pc red onion
5 pc asparagus
1 pc cucumber
1 cup arugula
2 tablespoons sliced almonds
Julianne or slice all the vegetables. Try not to use the seeds in the middle.
Combine all vegetables in a bowl. Toss with the lemon vinaigrette. Serve immediately. You can add grilled chicken or salmon to make it a meal.
