One-Eyed Betty's FestivALE prepares Tartiflette

Meghan Shaw and Beth Hussey, owners of the One-Eyed Betty's and mastermind of FestivALE prepare Tartiflette. This is one of  the signature comfort foods of FestivALE happening on November 21st in Downtown Ferndale. Incase you are unable to make this event you can find the recipe below.

Tartiflette
Ingredients:
4 large potato
1/2 lb thick cut bacon
1/2 medium yellow onion
1 sprig thyme
1/4 lb  good Brie sliced
Olive oil and butter for cooking
Salt and pepper

Directions:
Peel the potato and boil until barely fork tender (par cook) still firm enough to slice
Slice in about 1/8inch slices
Chop bacon and onion
Turn skillet on high and add 1tbsp of butter and 2 tbsp olive oil
Get the pan hot and add the onion. Cook onion for about 3 minutes before adding chopped bacon
Cook the bacon and onion for about 2-3 minutes and then add sliced potato.
Add chopped thyme. Cook until potatoes begin do golden and add the cheese, making sure the slices are distributed throughout.
Make sure to add salt and pepper for seasoning
Once cheese has melted and potatoes are golden, you are done!
