Recipes from The Pita Post
These schnitzel and falafel recipes come courtesy of Tal Sasson from the food truck The Pita Post. You can find more information about the food truck at www.thepitapost.com.
Sh-Ni-Tzel:
Ingredients
2 lbs boneless skinless chicken breasts (4 large breasts)
2 eggs
1 cup breadcrumbs, matzo meal, or panko
2 tbsp paprika
Salt and pepper
Oil for frying (pick one with a high smoke point like grapeseed)
Fresh lemon wedges for garnish
You will also need
Plastic wrap, mallet, skillet, paper towels
Falafel:
Ingredients
1 pound (about 2 cups) dry chickpeas/garbanzo beans - you must start with dry, do NOT substitute canned, they will not work!
1 small onion, roughly chopped
1/4 cup chopped fresh parsley
3-5 cloves garlic (I prefer roasted)
1 3/4 tsp salt
2 tsp cumin
1 tsp ground coriander
1/4 tsp black pepper
Pinch of ground cardamom
Vegetable oil for frying (grapeseed, canola, and peanut oil work well)
