These recipes for Mongolian Steak Stir Fry and Asian Berry Salad come courtesy of Chef Greg Richards.
Mongolian Steak Stir Fry
1/2 cup each of all veggies (sliced mushrooms, green onion, fresh green beans)
5 grape tomatoes
dash salt & pepper and garlic powder (or to taste)
2 oz (volume) sweet soy sauce
4 oz (weight) thin sliced Angus steak
Begin by searing the outside of the steak for 20 seconds each side then once seared on both sides add veggies. Steak will continue to cook with veggies. Cook steak and veggies for 2 minutes then add sauce. Sauté with sauce for no more than 30 seconds. Place rice on plate and stir fry over top.
Asian Berry Salad
2 oz dried Cranberries and Cherries
1 oz walnut pieces
8 oz Arcadian Blend
2.5 oz Michigan Berry Vinaigrette
Mix and top with slivered almonds and wonton strips.
