Redsmoke Barbeque's poultry brine recipe

This recipe for a poultry brine comes courtesy of Co-owner Tasso Teftsis and Chef Ken White from Redsmoke Barbeque. This brine, which you can find the recipe for below, can help ensure a tender and flavorful chicken or turkey.

REDSMOKE BARBEQUE'S POULTRY BRINE RECIPE
2 cups water
4 cups apple juice
1 cup soy sauce
1/2 Tablespoon thyme
1 cup brown sugar
4 Tablespoons kosher salt
1 whole chicken (about 4 pounds), split for easier marinating

Combine ingredients in a large soup or stock pot and stir thoroughly. Lower chicken into the pot. Ensure the brine covers the entire chicken. Cover with lid or foil and place in refrigerator. Allow to marinate overnight or at least 8 hours.
