Rochester hosting MI Earth Day Fest, Nosh Pit Food Truck's organic banana jam recipe

A sure sign of spring in southeast Michigan is the MI Earth Day Fest.

It's a weekend-long Earth Day celebration in downtown Rochester that takes place Friday through Sunday.

This year, the event is moving from its former park location to a lot at Third and Water streets, across from the fire station.

Joining Fox 2 is Nosh Pit Food Truck owner Karen Schultz to make Nosh Pit organic banana jam based on a recipe developed by Aki Kamozawa, Ideas In Food.

Nosh Pit Organic Banana Jam (Vegan, Gluten-Free)

Ingredients:
½ c. organic cane sugar
¾ oz. organic lemon juice
¾ oz. organic lime juice
3 large organic bananas, peeled & thinly sliced
1 ½ oz. water

Instructions:
Bring the sugar, juices and water to a boil over medium-high heat, stirring occasionally, until the sugar is dissolved.
Add the salt and bananas and bring back to a boil.
Cook for 5 minutes, stirring constantly. Reduce heat if necessary.
Cool to room temperature. Chill.

Yield: 1 ¼ c. Keep in fridge; serve on toast, PB&J or a grilled cheese sandwich.
