Sweet Lorraine's Twisted Grilled Cheez

METHOD
With a loving hand, sprinkle your grated cheese over a slice of your favorite bread ( we love Brioche and that is what we use at all our location about 1" thick). In a bowl combine hot noodles (we use twisted since it is a twisted grilled cheese sandwich) about 1 cup cooked noodles per sandwich & toss with 1/3 cup of your favorite hot, ooey gooey cheese sauce ( if we told you ours we'd have to kill you, so since we are peace-loving  I will give you a nice recipe below that I came up with that is similar to what we make at our restaurants).

Top the first slice with the cheesy noodles and then this is where you become a chef the toppings of your choice. Here are some examples:
Mushrooms, raw or sauteed
Pesto
Spinach
Tomatoes
Sweet onions
Diced bell peppers

When you are done with your creation top with some more cheese. Here are some choices:
Crumbled goats cheese
Fresh mozzarrella
Swiss
Smoked (anything)
Cheese curds

Top with your second piece of bread  place  on a well oiled griddle or pannini grill or saute pan and fry until bread and cheese become one --creating a Sublime perfection!

Not-our-secret-recipe cheese sauce

4 12 oz. cans evaporated milk
2 cups -low sodium vegetable stock
3 oz. unsalted butter
4 oz. -all purpose flour
1 tbsp kosher salt
2 oz parmesan cheese
2# shredded extra sharp cheddar cheese
1 tbsp dry mustard

Heat evaporated milk and stock. While heating, melt butter over medium heat. Whisk in flour until combined. Pour heated milk mixture into butter/flour slowly.
Whisk until smooth and fully combined. Remove from heat and add remaining ingredients with immersion blender until smooth.
Yield 8 cups
