The Great Foodini's salsa fresca

This recipe comes courtesy of Renee Chodkowski, The Great Foodini. She'll be at the Livingston Home Show  April 8-10 and the Taste of Livingston which is on Saturday April 9 from 11-3. She'll be at the demo stage Friday night at 7 p.m. doing Farm to Table with a new twich. She'll also be presenting at the Hartland Insurance Booth at 6 p.m. Friday, then again on Saturday at 11:00 a.m. and 3:00 p.m., and again on Sunday at 11 a.m. and 1:00 p.m.  
3 or 4 fresh tomatoes (seeded if desired)
1 small onion
1 clove pressed garlic (or more to taste)
1 medium jalapeno pepper
small handful cilantro
½ t salt
juice of 1 lime
Dice or chop tomatoes, onion, garlic, jalapeno pepper and cilantro to desired consistency.  Add salt and juice of lime, stir to blend.
