1 cup of kamouna*
1 cup of freshly diced tomatoes
1/2 cup of finely chopped scallions
2 oz finely chopped parsley
1 tsp of tomato paste
4 oz of olive oil
2 oz of lemon juice
1/2 tsp of salt
*Kamouna is cracked wheat with spices and herbs, and can be purchased at any Middle Eastern grocery store.
Place all ingredients into a bowl and mix until all ingredients are mixed thoroughly. Serve on a chilled dish and enjoy.
