Vertical Detroit's Grind Burger recipe

Vertical Grind Burger
Toast buttered bun on griddle until toasted on both sides
Cook burger using seasoning until desired temp, and melt gruyere on top
Top with Bibb Lettuce, Tomato, Tempura avocado, 2 strips of cooked bacon, and truffled aioli on the top bun.  and foie gras if requested. Serve with fries or a fresh summer side dish
Tempura avocado
1 cup soda water
½ cup AP Flour
mix well
Season avocado and dust in flour, place in tempura batter and drain, fry until golden and crispy.
Truffled Aioli
2 egg yolks
1 tablespoon Dijon mustard
1 clove garlic
Juice of 1 lemon
1 1/2 cups pomace oil
1 teaspoon Lemon zest
1 tablespoon white truffle oil
Add egg yolks, dijon, lemon juice and zest, and garlic to food processer, slowly drizzle pomace oil to emulsify. finish with truffle oil and season to taste
