Western Market's 2nd Annual Earth Day After Party

Come celebrate local food vendors and earth-friendly businesses at Western Market's Second Annual Earth Day After Party.

It is Friday, April 22 at from 4-8 p.m. at Western Market on 9 Mile Road in Ferndale. There will also be kids activities, live music and door prizes.

INGREDIENTS
1 side Bakkafrost salmon
1 T olive oil
0.5 pineapple
1 peach
1 lime
1 red pepper
0.5 red onion
0.5 bunch mint
1 T capers
1 roma tomato
Salt & pepper to taste

To Prepare Salmon
- Preheat oven to 350 degrees Fahrenheit.
- Remove the skin of the salmon and slice into fillets. Brush with olive oil and sprinkle with salt and pepper.
- Grill salmon for three minutes on each side. Finish in the pre-heated oven for five minutes.

To Prepare Salsa
- Finely dice pineapple, peach, pepper, onion, mint and tomato. Toss with lime juice. Mix in capers and season with salt and pepper.
- Serve over salmon.
