Andiamo's Coastal Cuisine: Broccolini & Quinoa Salad

Executive Chef Jim Oppat visited the Fox2 studios Saturday morning with another feature from the Coastal Cuisine menu, which is still available until March 26. Focused on eating healthy, this time he made broccoli, kale and red quinoa Salad and shared the recipe below.

 Ingredients:

  • 1 bunch Broccoli, florets and hearts
  • 1 bunch Asparagus, stems removed
  • 2 cups Kale, washed and finely chopped
  • 8 ounces Yellow Wax Beans, trimmed
  • 4 ounces Sugar Snap Pea Pods, peeled
  • 1 each Red Bell Pepper, fresh diced
  • 1 cup Red Quinoa
  • 1 cup Feta Cheese, crumbled
  • 1.5-2 cups Fines Herbes Vinaigrette
  • To taste Salt and Pepper

Directions:

1. Trim the broccoli florets from the stems and reserve, then trim the outer bark from the stems to expose the heart and slice.
2. Snap the ends off of the asparagus and cut into thirds.
3. Trim the ends from the wax beans and cut in half.
4. Remove the string from the top of the peas and leave whole.
5. The broccoli, asparagus, beans and peas will be blanched in boiling salted water and then shocked in ice water to stop the cooking process and preserve nutrients.
6. Cook the quinoa using vegetable stock according to the package, usually a 2:1 ratio.
7. Place the quinoa on a cookie sheet in the refrigerator to cool.
8. Toss all items together in a large bowl and dress with the vinaigrette as needed.
9. Season to taste with salt and pepper.
 
Fine Herbes Vinaigrette
 
Ingredients:
  • 2 each Fresh garlic cloves, minced
  • 1 each Fresh shallots, minced
  • 2 teas Dry powdered mustard
  • 2 each Egg yolks, pasteurized
  • 1 cup White Balsamic vinegar
  • 3 cups Olive Oil
  • 3 Tbls. Pesto
  • ¼ cup Fresh chopped parsley, chives, tarragon, basil and chervil
  • Salt and pepper (to taste)
  • Honey (to taste)
Directions:
 
1. Combine all ingredients, except oil, and mix until well combined.
2. Slowly drizzle in oil while whisking constantly.
3. This will form a permanent emulsion.
