Fried Fingerling Potato Chips with Blue Cheese Mousse 

Ingredients

  • 1 Cup Sour Cream
  • 1 Cup Blue Cheese
  • 2 Teaspoons Minced Garlic
  • 1 Tablespoon  Lemon Juice
  • Dash Tabasco
  • Dash Worcestershire Sauce
  • Salt, Cayenne Pepper

Directions

1. Blend all ingredients together

2. Season accordingly

Basic Cheese Mousse

Ingredients

  • 1/2 pound cream cheese
  • 1/2 pound soft cheese of your choice (Gorgonzola, Goat, Ricotta)
  • 1 teaspoon Lemon juice
  • Pinch of Cayenne Pepper
  • Salt, Tabasco sauce and Worcestershire sauce as needed
  • Flavoring options: White truffle oil, wine reduction, liquor reduction, fresh herbs, toasted spices, poached fruits
Directions
1. Puree all ingredients together in food processor.
2. Pipe as desired onto toast points, celery hearts, cherry tomatoes, etc.
3. Refrigerate and store for 7 days.
