Anaam's Palate makes Mediterranean Salad

Mediterranean Salad Recipe (Serves 5-6):


Ingredients: 

- 2 cups of burghul cracked wheat (wash, drain, and leave sitting for 15 minutes);

- 3 Cups of Chickpeas;

- 1 Red Bell Pepper;

- 1 Green Pepper;

- 1 Small Red Onion;

- 1 cup Kalamata Olives;

- ½ cup of Greek Feta;

- ½ bunch of curly parsley (finely chopped;

- 1 tablespoon of chopped Dill;

- 1 tablespoon of Mint (dry or fresh);

- 1 cup of olive oil (regular or extra virgin; your choice);

- Juice of ½ a lime or lemon (your preference);

- 1 teaspoon of salt;

- 1 tablespoon black pepper;


Instructions:

- Finely chop all the vegetables and place into a mixing bowl;

- Add the burghul, feta, and remaining ingredients into the mixing bowl;

- Toss everything together; and

- Give it a taste! Based on your liking feel free to add some extra salt or lemon/lime juice.
