For the Love of Sugar: Chocolate Chip Peppermint Scones

Founder and Owner Manal Hussein stopped by the Fox2 News studios Saturday to offer a taste of one of her favorite recipes.

Chocolate Chip Peppermint Scones

Ingredients

  • 1 ½ cups all purpose flour
  • 2 Tablespoons granulated sugar
  • 2 ¼ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 6 Tablespoons cold, unsalted butter
  • 1 Large egg yolk
  • ½ Cup cold buttermilk
  • 1 teaspoon peppermint extract
  • ½ Cup mini chocolate chips
  • 3 Tablespoons crushed peppermint
  • +Egg wash (1 egg yolk plus splash of milk)

Directions

Line a baking sheet with parchment paper and set aside.

In a food processor add together flour, sugar, baking powder, baking soda and salt.  Pulse. Cut in butter until mixture resembles coarse meal. Place in medium size bowl.

In a small bowl, combine egg yolk, peppermint extract, and buttermilk and beat lightly with a fork.  Add to flour mixture all at once, stirring enough to make a soft dough.  Fold in the chocolate chips and crushed peppermint.

Turn out onto a floured surface and knead just until combined. Pat into a circle, about 8" in diameter. Cut into 6 equal "slices." Place on prepared baking sheet and brush with egg wash mixture. Sprinkle some course sugar and peppermint on top. Bake at 425 degrees F for 12-15 minutes.
