Roasted Broccoli

 Ready, Set, Cook! is Health Alliance Plan's signature campaign to address childhood obesity in Michigan, considering that almost 20 percent of Michigan adolescents are considered overweight by the CDC.

Here is a healthy and fun recipe for broccoli:
Roasted Broccoli with Crunchy Parmesan Crumbs
Ingredients:
2 lbs of Broccoli Crowns, Trimmed into flat spears
1 Cup Whole Wheat Breadcrumbs
¼ Cup Parmesan Cheese, Grated
2 Tablespoons Olive Oil
2 Tablespoons Dijon Mustard

Directions:
Preheat oven to 425 degrees F. Trim broccoli crowns into long flat spears, creating a flat surface area on the broccoli. Arrange broccoli onto baking sheets, making sure not to crowd pan. Roast for about 10-15 minutes, or until broccoli begins to brown.
In the meantime, heat a medium sauté pan over medium heat, add olive oil to the pan, and once heated add bread crumbs. Toast bread crumbs in pan for 3-5 minutes until golden, stirring frequently. Pour toasted breadcrumbs onto a plate, and stir in parmesan.
Remove broccoli from oven, dip each spear in the Dijon to lightly coat, and then press firmly into the bread crumb mixture.
