All-star chefs make up Team Joseph benefit

On Friday May 15th, a bevy of top chefs from area restaurants will serve up fare for a charity wine tasting to benefit Team Joseph, a Duchenne muscular dystrophy non-profit.  

Executive Director Marissa Penrod will host with her son Joseph, for whom the charity was founded, and other Duchenne boys and their families.

 Red Wine Braised Short Ribs 

5 # beef short rib cleaned

1 bottle of red wine

4 pieces of celery, diced

2 onions, carrots, diced

Thyme, Rosemary

2 bay leafs, Pepper corn whole

1/4 cup    AP flour

1 cup    port wine

2 tbl     honey

6 cups     beef stock

Soak the short ribs in red wine over night.  Drain and reserve wine.  Season with salt and pepper. Coat in flour.   In large pot, sear the short ribs.  Remove.  Add all the vegetables and herbs. Sweat or 3 mins, leaving still crunchy. Add the port and reduce. Add the reserved red wine and reduce.  Add veal glace reduce.  Add liquid over the short ribs and braise for 5 hours.  When done cool in the liquid so the meat does not dry.
