J. Baldwin's New Year's Eve appetizers

Brie En Croute


1 5oz Brie Wheel
1-sheet of puffed pastry
Dried cherries or cranberries
¼ cup crushed walnuts
1 tblsp Fig Jam
½ sliced apple
½ cup egg wash ( two eggs mixed with cream or milk )


Preheat oven to 375 degrees.
Lay down puffed pastry on cookie sheet lined with parchment paper. Top pastry with fig jam. Then add dried fruit.
Brush corners of pastry with the egg wash.  Place whole brie wheel in center of pastry on top of jam and fruit. Pull corners of pastry up and over the brie to seal it in. Brush outside of pastry with egg wash. Bake in oven for 20 minutes until golden browned. Serve with favorite crackers.

Beef Negimaki


1 NY Strip Steak about 1 inch in thickness
1 Red Pepper
1 Green Pepper
1 Yellow Pepper
1 Carrot
1/8 cup julienne ginger
¼ cup sweet thai chili sauce


Season NY strip steak with salt and pepper and sear to rare, about 2 minutes on each side. Place steak in freezer for about an hour. Take out of freezer. Slice steak thinly, vertically. Julienne all of the vegetables. Roll steak slices around a variety of julienne veggies.  Place seam side down on platter. Top each steak piece with ginger and drizzle with thai chili sauce.

2 Sprays of Campari in glass
1.5 oz Hendricks Gin
.5 oz St. Germaine
.5 oz Fresh Lemon
3 dashes Lemon Bitters
