Spicy black bean chili recipe from Zoup!

Spicy Black Bean Chili
Serves 4 to 6
Ingredients:
1 tbsp. extra virgin olive oil
1 medium white onion, diced
1 carrot, peeled and diced
2-3 celery stalks, diced
2 Jars Zoup! Good, Really Savory Vegetarian Broth
1 Green Pepper, diced
2 cloves garlic, chopped
4 mild green chille peppers, chopped
2 cans black beans, drained and rinsed
1 small can tomato paste
1 large can crushed tomatoes
1 large can diced tomatoes
1 tsp. fresh thyme
¼ cup cilantro, chopped
2 tsp. brown sugar
1 tsp. chili powder
1 tsp. cumin
¼ tsp. red pepper (Cayenne)
½ tsp. crushed red pepper

Directions:
1. In a large pan heat extra virgin olive oil.  Add onion, carrots, celery, green peppers, and garlic.  Sauté until the vegetables soften.
2. Add broth and bring up to a boil.
3. Reduce heat and add black beans, tomato products, spices, thyme, cilantro and chilies.  Simmer for 20 minutes.
