STEP's Champions of Tomorrow fundraiser

Services to Enhance Potential, or STEP, helps mentally challenged individuals achieve their goals. Their big fundraiser is Thursday, Dec. 3 at the Andiamo in Warren. The night includes entertainment by local talents, dinner, cocktails, dancig and vendor displays.

This chicken marsala recipe comes courtesy of Andiamo Chef Jim Oppat.

CHICKEN MARSALA
2 fl oz. Italian cooking drum oil
2 lb. breast 7 oz. fresh chicken
1 oz high gluten flour
8 oz wild mushrooms, sliced
8 fl. oz. marsala wine
8 fl. oz veal stock
3 Tbls unsalted butter
1 pinch iodized salt
1 pinch table black pepper
1 pinch Italian parsley

Trim the breasts of any fat and try to make into four equal portions. Cut the largest breasts on the bias as needed into smaller portions that will cook more evenly. Season with salt and pepper and lightly dust with flour.
In hot skiller, heat the cooking oil and begin to sear the chicken on both sides until well caramelized. Repeat as necessary until all chicken is seared.
In residual oil, roast the mushrooms over medium-high heat. When tender, deglaze carefully with the marsala wine, be careful as it will ignite.
Reduce the wine by half and add the stock. Simmer over high heat and reduce by a third.
Add the butter and reduce heat to medium, stir continually to incorporate the butter into the sauce.
Return the chicken to the pan and simmer to blend all flavors. Place the chicken on heated plate and pour the sauce over.
