Vince & Joes Crostini with Boursin & Asparagus Tips
Ingredients 1 baguette, sliced into ½-inch rounds 1 package of Boursin cheese (Garlic & Fine Herbs works best) 1 bunch fresh asparagus (tips only or cut into 2-inch pieces) 2–3 tbsp olive oil 1 clove garlic (optional) Salt & freshly cracked black pepper Zest of 1 lemon Instructions Prep the crostini Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast for 8–10 minutes until golden and crisp. Cook the asparagus Trim and cut the asparagus into small tip sections. Heat a little olive oil in a pan over medium heat. Sauté for 3–5 minutes until just tender but still bright green. Season with salt, pepper, and a touch of lemon zest. Assemble Pipe or spread a generous layer of Boursin cheese on each crostini. Top with asparagus tips and sprinkle with shredded Parmesan.
