Lemon sugar cookie recipe below: Lemon Sugar Cookies (12 cookies) 16 tablespoons (2 sticks) unsalted butter, softened but still cool 1 cup (7 ounces) granulated sugar, plus ½ cup for rolling dough 1 tablespoon light brown sugar 1 large egg 1 teaspoons vanilla extract 1/2 teaspoon lemon extract 2 cups all-purpose flour ½ teaspoon baking powder ½ teaspoon salt DIRECTIONS: • Preheat heat the oven to 350 degrees. • Cream the butter, the 1 cup granulated sugar, and the brown sugar at medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl with a rubber spatula as needed. • Add the egg, vanilla and lemon; beat at medium speed until combined, about 30 seconds. • Whisk the flour, baking powder, and salt together in a medium bowl • Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed. • Place the ½ cup sugar for rolling in a shallow bowl. • Roll cookies in sugar to completely coat • Place on sheet pan • Use the bottom of measuring cup (1/2 cup) to press slightly down. • Bake 10-12 minutes, rotate pan and bake another 4-5 minutes or until the cookies are golden brown around the edges and their center are just set.
