MEX Chilaquiles
8 oz Warm Tortilla Chips
8 oz Warm Chilaquile Sauce*
4 oz Marinated Steak
2 Scrambled Eggs
½ Avocado Diced
½ c Your favorite Mexican cheese blend
¼ c Diced Onion
2 Tbsp Chopped Cilantro
Toss tortillas in chilaquiles sauce. In oven proof dish, layer tortillas, steak, scrambled eggs and cheese. Place in oven until cheese is melted. Plate dish and top with avocado, onion and cilantro.
Chilaquiles Sauce*
2 Guajuillo Peppers
1 Arbol Pepper
2 Tomatoes
2 Tomatillos 2 each
½ Medium Onion
1 Garlic Clove
Salt and Pepper to taste
Simmer all ingredients together until tomatoes, tomatillos and peppers are soft. Puree together in blender. Season with salt and pepper.
