Cooking Stew with Little Liberia

Ameneh Marhaba opened the restaurant, Little Liberia on March 5th. It's located at 16530 East Warren Ave in Detroit and offers a full bar with a host of specialty cocktails. The cocktails featured in the segment with FOX 2 are: Liberian Girl, Bassa Blue, and Brown Suga. Little Liberia will be having its grand opening celebration on Friday, May 15th from 12-2pm. There will be a ribbon cutting ceremony with Detroit Mayor Mary Sheffield, various community members on-hand, as well as cultural entertainment and other offerings. https://www.littleliberia.com/ Note: Little Liberia's menu is Halal Recipe for Groundnut Stew Ingredients 1/2 lb diced beef 1 diced onion Pinch of salt Pinch of pepper 1 cup vegetable oil Minced garlic 1/2 spoon peanut butter 1/2 spoon tomato paste Groundnut spice - special blend Instructions Boil the beef, half of the onion, salt and pepper in two cups of water for 30 minutes. In a separate pot, stir fry the rest of the onion and the garlic in the vegetable oil for 15 minutes. Add the peanut butter, tomato paste and groundnut spice and cook for an additional 15 minutes. Add the beef with beef stock to the pot with the onion and garlic mixture along with three cups of water. Mix and cook for 25 minutes. Serve with white rice and sweet plantains.
