Father's Day Waffle Palooza

Dads love their bacon and eggs, but maybe this year is the time to switch it up for your Father's Day brunch. Chef Kelli Lewton joined us in the FOX 2 Cooking School to show us how to whip up a waffle bar. She also shared a recipe idea with us that is a take on nachos, which you can find below.

8 cooked Belgium waffles (crisp)
16 strip of cooked bacon
10 chicken strips cooked chopped ( or "popcorn" style chicken)
1 cup cheddar cheese grated
¼ cup scallions
Honey to taste ( or maple syrup)
Sriracha to taste 

1. Cut waffles into 4 then cut again to make 8 pieces
2. Layer /sprinkle waffles with bacon, chicken and cheese and melt in oven until cheese is bubbly
3. Top with scallions and honey/Sriracha to taste 

Waffles, Waffles & Waffles!
Pizza Waffles: Sandwich your favorite pizza toppings between waffles and melt in oven.
Churro Waffles: take backed waffle, brush with butter and then crust in sugar and cinnamon, quickly shallow fry in oil or butter, serve with dark chocolate sauce  
Chorizo Mexicali Waffle: top waffle with cooked chorizo, spicy cheese and sautéed onion, serve with hot sauce 
Top waffle with your favorite sauce gravy
Put cooked bacon in waffle batter and top with additional bacon and pure maple syrup
