(WJBK) - JARC, an organization serving people with disabilities, is hosting its 18th annual SpringElation fundraiser June 1. It is an all-inclusive family night at The Detroit Zoo from 6 p.m. to 9 p.m. The private evening at the Zoo includes a picnic dinner by Quality Kosher Catering and exclusive twilight access to many of the Zoo's most popular attractions.
Quality Kosher Catering's chef Christine Anschuetz joined us in the FOX 2 Cooking School with JARC CEO Robert Blumenfeld to tell us more about the event, and give us a preview of the food. You can find her jicama watermelon salad recipe below.

JICAMA WATERMELON SALAD
Jicama 2 cups medium dice
Watermelon 2 cups medium dice
Red onion 1Ž4 cup small dice
Cilantro 1/8 cup chiffonade
Honey 1Ž4 cup
Fresh squeezed lime juice 1Ž2 cup
Serrano chili seeded and minced 1 tbsp.
Salt to taste and mix in bowl
