TOMATO WATERMELON SALAD WITH A MINT VINAIGRETTE

½ cup  minced jalapeño
1 ½ Tbl  shallot minced
6 clove  garlic minced
1 cup  chiffonade mint
2 cup  EVOO
2 cup  red wine vinegar
½ cup  honey

2 cups   watermelon cubed
2 ea  heirloom tomatoes
¼ cup  diced red onion
¼ cup  Spanish cheese or feta
Salt and pepper to taste

Make the vinaigrette. In a separate bowl combine the watermelon, tomato, onion, and cheese. Pour enough vinaigrette to evenly coat all items. Serve immediately.
