Calling Angels is holding a charity benefit next week at Penna's of Sterling. This recipe is courtesy of Penna's of Sterling:
ROTINI PRIMAVERA
SERVING: 4 PEOPLE
½ LB ROTINI NOODLE
½ CUP FONTINILLA CHEESE
4 SLICES SWISS AMERICAN CHEESE
6OZ WHOLE MILK
6OZ HALF & HALF
2OZ GRATED PARMESAN
¼ CUP YELLOW SQUASH
¼ CUP ZUCCHINI
¼ CUP BROCCOLI FLOWERETS
2OZ PEAS
4 SLICED MUSHROOMS
4 CHOPPED ASPARAGUS
PINCH SALT & PEPPER
1 GARLIC GLOVE
1 CUP CLARIFIED BUTTER
ROUX FOR THICKENING
DIRECTIONS:
SAUCE:
BLEND MILK & HALF AND HALF IN POT
BRING TO A BOIL
ADD ALL CHEESES
STIR TILL ALL CHEESES ARE MELTED
BRING BACK TO A BOIL
ADD SALT & PEPPER
THICKEN WITH ROUX TILL DESIRED TEXTURE
PRE-STEAM ALL VEGETABLES
IN SEPARATE PAN TOSS VEGETABLES WITH BUTTER, SALT, PEPPER AND MINCED GARLIC.
BOIL ROTINI IN WATER IN POT FOR 12 MINUTES. AND DRAIN ROTINI PASTA
TOSS VEGETABLES IN WITH PASTA & ADD SAUCE
THEN SERVE.
