Central Kitchen and Bar's lamb loin chops recipe

Detroit's Central Kitchen and Bar is celebrating a big birthday this week. To mark the occasion, they're rolling out special food and drinks.

Co-owner Dennis Archer Jr. is here along with executive chef Christina Stanco to tell us about some of those food and drinks. They also share their recipe for lamb loin chops, which you can find below.

For the Lamb:
Season with salt and pepper and grill to medium rare

For the Lebna:
16oz plain yogurt
4oz feta cheese

Strain yogurt through cheese cloth overnight. Yogurt will become thick.

In a food processor combine the strained yogurt and feta, purée till smooth.

For the stew:
1 cup chickpeas
1/4 cup golden raisins
1/4 cup red pepper, diced
1/4 cup celery diced
1/4 cup onion, diced
1/4 cup olives, pitted
1 tablespoon curry
1 teaspoon cumin
1 teaspoon coriander
16 oz chicken stock
1/4 cup butter
Salt and pepper to taste

Sauté, all ingredients in olive oil till celery and onion are translucent.  Add spices, butter and chicken stock.

Simmer for 20 mins.

Ladle into a bowl, top with lamb and garnish with Lebna
