Chive Kitchen's pickled green onion-chipotle salsa

Suzy Silvestre from Chive Kitchen joined us on The Nine to show us how to make a pickled green onion-chipotle salsa.

Pickled Onions
4 Cups Sliced Green Onions
1 Cup Apple Cider Vinegar
1 Cup Orange Juice
1 Garlic Clove
1 Cup Sugar
2 Bay Leaves
Water to Cover
Place all ingredients in a pot and bring to a boil.  Once boil is reached, turn off heat and let sit until the onions have cooled down.

Salsa Base
1-2 Dry Chipotle Peppers
4 Tomatoes Rough Chopped
2 T Lime Juice
1 T Canola Oil
1 Red Onion Rough Chopped
1 tsp Tamarind Paste
Place all ingredients in a food processor or blender and process until broken down.

Salsa Additions
1 Cup Pickled Green Onions
1 Mango Diced
1 Cup Cilantro Minced
Salt to Taste
